  1. In a large bowl, combine the yogurt, vinegar, garlic, pepper, salt, cardamom, allspice, and lemon juice, until well mixed.
  2. Add the chicken, coating it well with the marinade. If the mixture seems too dry, add olive oil, 1 tablespoon at a time, until you’ve achieved the right consistency. Cover and refrigerate for at least 8 hours, preferably overnight.

  4. In a stockpot or a large saucepan, cook the chicken over medium heat for 45 minutes or until done. Be sure not to overcook it.
  5. If the chicken becomes a little dry, add a few tablespoons of water.
  6. When the chicken is done, you can shred it or cut it into small pieces.
  7. In a large bowl, add the chicken, french fries, onions, tomatoes, and cucumbers. Add the parsley and optional pickle slices and mix well. Set aside.
  8. Place the mixture in each roti. Pour a white sauce (find the recipe here) over the filling and roll the roti into a neat wrap.
