It’s time we accept the fact that kids will never eat their vegetables, that is, unless you get creative with how you prepare them. I have made it my mission to give you vegetable dishes that your children will enjoy. This is another one of the dishes that I prepared to get my kids to eat their veggies.

Mixed Vegetables With Feta And Tomato Topping

- Preheat the oven to 350°F/180°C.
- Heat the olive oil in a large frying pan and add the vegetables and half the garlic. Cook stirring over low heat until just starting to soften, about 15 minutes. Season well with salt, pepper, and nutmeg. Spread evenly into a prepared buttered baking dish.
- Heat the remaining oil and fry the chopped onion over low heat, stirring often, about 5 minutes. Add the remaining garlic, tomatoes, wine, and parsley. Cook until all the liquid has evaporated, about 10 minutes.
- Sprinkle half the Feta over the vegetables and spread the tomato mixture over the top. Sprinkle with the remaining cheese and the thyme sprigs and bake until heated through, about 30 minutes.
