When I make home-made burgers, I sometimes make salmon patties instead of the usual beef or chicken patties. They taste great and my daughter actually complains that I don’t make them enough! I have promised that I will make them at least twice a month. They also make a great packed lunch for the kiddies for school, so I always make extra for her to take some to school the next day.

  1. Drain and reserve the liquid from the salmon. Mix the egg, onion, breadcrumbs, and salmon together.
  2. Make into patties. If the mixture is too dry to form into patties, add the reserved liquid from the salmon.
  3. Heat the olive oil in a frying pan. Place the patties in the pan. Brown on each side, turning gently. Drain on paper towels and serve.
