When I make home-made burgers, I sometimes make salmon patties instead of the usual beef or chicken patties. They taste great and my daughter actually complains that I don’t make them enough! I have promised that I will make them at least twice a month. They also make a great packed lunch for the kiddies for school, so I always make extra for her to take some to school the next day.
- Drain and reserve the liquid from the salmon. Mix the egg, onion, breadcrumbs, and salmon together.
- Make into patties. If the mixture is too dry to form into patties, add the reserved liquid from the salmon.
- Heat the olive oil in a frying pan. Place the patties in the pan. Brown on each side, turning gently. Drain on paper towels and serve.
