I was introduced to samp by one of our friends who had gone to South Africa on a business trip. He brought back a few packets of this delicacy and was kind enough to give us a packet, as well as the recipe, so that we could try it out for ourselves. It is essentially dried corn kernels that have been pound into rough pieces. It is delicious and quite filling. It is served as a main dish, with tomato sauce, gravy, or soup typically poured over it.
- Wash and drain the samp.
- Add salt and water to the samp and cook until tender, stirring often.
- Add the tomato sauce (recipe below) and serve with a bean relish.
- Sear the onion in oil, add the flour.
- Add the tomatoes and water.
- Boil until thick.
