  1. Heat the oil in a wok or a pan, add the garlic and ginger, and stir-fry for about 1 minute.
  2. Add the carrots, celery, and broccoli and cover. Reduce the heat and let it simmer for about 2-3 minutes.
  3. Add the bean sprouts, spinach, bamboo shoots, mushrooms, onion, soy sauce, and oils and stir-fry until well combined.
  4. Mix together water and cornflour and add to the vegetables and stir-fry for about 2
    minutes. Serve with egg noodles.
