  1. Separate the eggs and beat the yolks until they’re a very light colour. Add sugar and continue beating until fluffy.
  2. Beat the egg whites until stiff and add to the yolk mixture. Beat in the hot water and lastly beat in the flour and baking powder.
  3. Pour into a well greased tin and bake in a preheated oven at 350°F/180°C.
  4. Bake for 30 – 40 minutes or until a skewer inserted in the middle comes out clean.
  5. When cool, ice with your icing of choice.
